Though they tried to incorporate FMA knife work, in the end most may end up edited as"Hollywood" action scenes is dependent upon the director's eyes. The book he used as a reference was "Medieval Combat: A Fifteenth-Century Illustrated Manual of Swordfighting and Close-Quarter Combat" by Hans Talhoffer. From what I understand the book was written and illustrated by a 15th century fencing instructor--so all the moves are genuine, and so are the odd weaponry. It's on Amazon.com for $26-$32.
