I picked up an interesting knife from Rona here in Edmonton, Alberta which is a folding utility knife. It has a mechanism that allows you to change a razor sharp blade within seconds, yet performs just like a folding knife. I use it constantly at my job site from cutting pneumatic lines, boxes, wire insulation and even the skin off sausages (lunch and all that good stuff). If I feel the need to have a razor sharp "slashing" tool then I just pop a new blade in, but in a dire emergency the existing blade will easily do the task.
