Why? you already answered that....it serves its purpose. For me it is a means to break up my training routine...something different on occasion. We (CS Kim's ITF TSD) still do the single, double, & triple punches from horse stance. The singles and doubles are usually middle punches, the triples are usually low-middle-high. We use them as an endurance exercise, to build leg strength, and especially to teach good TSD punching form - i.e. good waist twist, tight fist, proper fist rotation during extension, and concentration/focus during the exercise. I very regularly have my students throw many punches from the horseback stance to work on proper technique, build leg strength, and to build reflexive punching. Even did some old school inner/outer forearm and knifehand conditioning exercises (done with a partner on each other). Everyone walked away from class rubbing their arms, legs, and hands like crazy to soothe the bumps and bruises. And they all walked away with a smile :) I like to train like I was trained and encourage my students to train their future students the same way. I do for the very reasons you listed, leg strength and muscle memory. A person can't practice the basics enough. Another favorite oldie is standing in a back/L stance and do a (lead hand) jab - then shift into a front/forward stance into a (back hand) reverse punch. Working hip & waist rotation, use of weight, and proper punch techniques. I make it very clear that relationships with instructors & students is not condoned but I don't "forbid" them. Although a different situation, my girlfriend (now wife) joined martial arts at my invitation. I was already an instructor when she joined. Now our 12 year old is very active. However, at one time, before we married, we split up. It was very tough on both of us. I spoke to another instructor that I knew and respected. I asked him if she could join his class and I even offered to pay her membership/dues (unbeknownst to her). To boot, we really didn't split up on good terms but I knew she needed martial arts and it was in her blood like it's in mine. So it was only fair (mad or not) to make sure she had a martial art home. My first dojo taugh Ninjutsu, Ju-justsu (japanese style, not brazilian), Aikido, and Shorin-ryu Karate. The ninja students were allowed to attend all classes except the Aikido classes. They said that the energy was different ( I didn;t really question this as I was only 12 at the time). The Dojang where I train now has offered kickboxing (not proper Muay Thai but more like freestyle TKD) but the instructor stopped teaching because no one was coming. We still have BJJ classes about two days a week at our different locations. I suppose if you want to mix different styles in one school the only real limits would probably be having the right set up in the gym. But if you wanted to mix different styles into one "hybrid" art it definitely can be done (JKD is a great example even though it still has a strong Wing Chun flavour). We have a school here in Perth called Zen Do Kai, which operates as a freestyle martial arts school. So I guess my point is the sky's the limit, just have to sit down and plan it out. I would also wonder how the other students would feel. Sounds like a PR problem waiting to happen. As far as student dating students; you really can't control what your students do outside of the classroom.
